Ann and Kim Seeley kiss as Brian sits at Elk Creek Cafe’s Bar. Farmers from around the area came in for the night to celebrate Tim Bowser’s 50th birthday with local food, beer and live blues. Kim Seeley is a grass fed dairy farmer himself, as well as a bit of a local foods leader in Pa as acting president of PASA.

During the PASA tours Brian moved his natural rind cheddar “#3″ into the cave. Not only was it nice to see cheese in the cave, but it also no doubt helped to air out the tasting room in his cellar where the cheese is usually stored.

Brian Futhey shows a tour group the cheese cave he built two years ago. Made from a buried shipping container, which initially collapsed, Brian has been hesitant to put cheese in the cave until he’s positive his new framing will hold.

Saturday brought PASA farm tours to Stone Meadow and this years first Leigh Belle. Though a bit premature Brian’s Camembert is shaping up nicely, and I have one sitting in the fridge waiting to soften, hopefully next week we’ll be enjoying its true intensity.
